Yam salad and raw zuchini pastas


Potato salad makes great side dishes. Just boil some potatoes of your choice (I used yams), diced. Don't cook for too long otherwise it's gonna become mashed potato! I used one mashed avocado as the base for the sauce, then add about 1 tbs of each of those: Dijon mustard, lemon juice, apple cider vinegar, olive oil. A pinch of salt & pepper, some other spices like turmeric, garlic...
Raw zuchini pastas: Use a 2:1 ratio: 2 medium zuchini for 1 avocado. Peel and grate the zuchinis. Mash avocado. Add a few drops of lemon juice, a pinch of salt & pepper. With some fresh garlic it's very good too.
