
Potato salad makes great side dishes. Just boil some potatoes of your choice (I used yams), diced. Don't cook for too long otherwise it's gonna become mashed potato! I used one mashed avocado as the base for the sauce, then add about 1 tbs of each of those: Dijon mustard, lemon juice, apple cider vinegar, olive oil. A pinch of salt & pepper, some other spices like turmeric, garlic... Raw zuchini pastas: Use a 2:1 ratio: 2 medium zuchini for 1 avocado. Peel and grate the zuchinis. Mash avocado. Add a few drops of lemon juice, a pinch of salt & pepper. With some fresh garlic it's very good too.
